Live, guided tasting of five Chinese teas selected to sustain focus and smooth the afternoon dip. Brew along from home with senior tea expert Chen Hui Yi.

The afternoon slump is a physiological signal, not a weakness. Our bodies cycle through ultradian rhythms, and mid-afternoon often brings a natural dip in alertness. A well-chosen cup of tea can honour that rhythm — lifting energy without the jittery crash that follows a second coffee. This online flight turns the slump into a mindful pause, guided by senior tea expert Chen Hui Yi.

We’ll begin with a quiet settle-in. Once everyone has water at the right temperature and leaves in the gaiwan, Chen Hui Yi will introduce the first tea: Bái Mǔdān (白牡丹), a white tea from Fuding, Fujian. Its downy buds and young leaves yield a liquor as soft as new morning sunlight. The gentle L-theanine and low astringency set a calm, focused baseline. From there we move to Ānjí Bái Chá (安吉白茶), a green tea from Zhejiang that, despite its name, is processed like a green — its pale, translucent cup brims with vegetal clarity and a hint of sweetcorn. It resets the palate and sharpens attention.

The third tea steps into the more elusive category: Huǒshān Huángyá (霍山黄芽), a yellow tea from Anhui. Its subtle, slow oxidation through the mèn huáng process creates a round, almost nutty depth — perfect for mid-flight, when the mind is fully online and ready to detect nuance. Then we’ll turn to a lightly oxidized oolong, Tiě Guān Yīn (铁观音) from Anxi, Fujian. Its floral, creamy fragrance fills the senses and stretches the session into a longer, steadier arc of energy. Multiple infusions reveal how the leaves evolve, teaching a skill you can carry into any afternoon. We finish with Diān Hóng (滇红), a Yunnan black tea made from golden tips. Soft malt and honey notes give a warm, comforting close — no bitterness, just a smooth descent back into the flow of work.

Throughout the flight, you’ll brew along at home. A week before the event we’ll send a leaf list with sourcing suggestions; shop.thetea.app has curated a tasting set with the exact lots Chen Hui Yi will use, or you can reach for your own stash. Each tea gets about ten minutes of focused brewing and discussion, and after the last cup we open the floor for questions and shared tasting notes.
